From our travels in to Trinidad comes this cacao. Via a long windy road from Port of Spain you enter a beautiful valley in which the Finca dos Vista is situated. Jens runs this estate and grows and ferments his cacao here. It was amazing visiting his farm in January. We left the cacao beans age in our workshop for a few months before working with them.

The chocolate we made from these beans is spectacular. Dark, rich and a beautiful finish of red cherry.

We carried the cacao beans in our luggage home, so this edition is very limited.
